Next year I will be participating in the ING Miami Marathon for the second year. I’m a little behind on training for the ING as I’m still focusing on my last triathlon of this season on November 13th. Once I’m done with that then I can dedicate more time to running.
One good thing I noticed is that every year I can start my training at a higher mileage. For example, last year I began training at 8-9 miles having built a base during workouts. This year, in fact this week I just picked up and ran 12 miles for my first training session.
I’m looking forward to ING 2012 on January 29th!

Here’s another super easy, TWO ingredient recipe!
All you need is a can of coconut milk and a few pieces of dark chocolate (for one big serving or two small servings).
Place the can of coconut milk in the refrigerator overnight so that its content separate. The white foamy stuff will be on top and the coconut water will settle at the bottom. When ready, open the can and carefully scoop out the white stuff without getting any liquid.
Beat for five minutes until it becomes airy like.
Melt the chocolate and mix with the coconut milk. Beat for a minute or two until well blended together.
And that’s it! Now you have a dairy-free, low sugar dessert. Refrigerate for sometime before eating if you like it to have a harder consistency.

I was so happy to find this recipe online. I’m not a huge fan of pancakes but once in a while I do crave some. Now you can have guilt-free pancakes!
The best thing is that you only need three ingredients!
For a one person serving use one banana and one egg with a tablespoon of almond butter. For more pancakes, use more eggs and bananas with a really big tablespoon of almond butter.
Mix all ingredients together.
And cook just like a regular pancake…
Now you only need a good syrup. Go natural and have your pancakes with honey or real Maple syrup like I have here. None of that fake sugar and high fructose syrup!!!
I have been making them with same ingredients but adding one scoop of whey protein. I also poach one soft egg on top with fruit and leave out the syrup…. Just like this!
Another variation for toppings is the blueberry sauce. Just microwave a handful of blueberries until they start to pop and the sauce starts to form. Keep your eye on them because a blueberry explosion in your microwave can happen. Believe, I know!! 😉
Pancake ingredients for one large serving is:
1 TBP of almond butter
1 scoop vanilla whey protein powder
3 TBP of egg whites
Mix all in a bowl and transfer to greased pan and allow it to cook fully before flipping and cooking other side. For more adjust amount of ingredients.
