As a child one of my favorite meals was “cocido” which is boiled ripe plantain with butter and shredded cheese. Now I have modified this favorite dish to make it Paleo friendly and although I would not have this as a meal now it makes a great side dish. Some complex carbs from the ripe plantain and protein with some fat needed for a balanced diet.
When making this I use 4 very ripe plantains. One package of Apple gate uncured bacon. One tablespoon of grass-fed butter.
Method: Boil plantains until soft. Meanwhile, chop bacon and cook on stove top. Once plantains are done mash with fork and add butter. Mix well. Add bacon once cooked and mix all together.
Someone once asked me this question and couldn’t help but to be amused. Well, after that my wheels began turning…. Some friends were already doing it and spoke wonders so my only reaction was that I had to give it a try.
After receiving my shares from Annie’s buying club I noticed that I would receive greens or other items that I don’t normally eat and didn’t know what to do with them. Sometimes due to lack of time or creativity, I started looking into juicing as a matter of still consuming those vegetables. I began to research for a juicer. Being my first one, I knew I did not want to spend top dollar on one just in case it didn’t get much use. After some comparison and recommendations I went with Hamilton Big Mouth Juicer. I must say I am very pleased for the price I paid.
Now on to the recipes. I don’t follow a specific recipe for juicing. I know there are specific combinations of foods for specific purposes but I rarely get to do that. Because I already get my food from Annie’s, I just use whatever I get or what’s left in the box that I haven’t used for cooking. I just recently added a Juicer’s Delight box to my shares and it’s great. That box is specifically for juicing so I use the entire box and make juice for a week. I have also read up on what some foods are good for and always make sure to include those in my juicing. For example, beets are great as liver cleanser and apples for digestion due to its fiber content…. I would just recommend speeding time online and reading up. About storing your juice: I have read that it’s best to consume your juice right after making it in order for your body to absorb the most nutrients. However, that’s out of the question for me time wise. Since I don’t have the time to juice everyday I have learned that the best way of storing it is in air tight glass containers. As you see in my pictures, I use mason jars. I juice once a week and make enough for the entire week. I drink one mason jar daily. I can not begin to tell you how great I feel since I started juicing. And to my surprise my husband has even joined me in this and we can not go a day without our juice. It keeps me feeling great, with energy, lean, and regular. I’ve been juicing for about 2-3 months now on a regular basis and it’s another healthy habit I’m planning on making it a routine. I’m still learning on the topic so any suggestions, tips or comments are welcomed!!!
Salmon is a dish make weekly. Sometimes it can be tough to find different ways to cook the same food week after week. Well, I found this salsa that has totally made my life easier.
It’s so good that I have made it for a few weeks in a row now and every time I look forward to eating it. I found this salsa in the produce section of the local groceries store. It’s all natural, not processed. It really taste fresh. After trying this I’m never buying the stuff that comes in a jar!
The method is as simple as you see here. Just cover the fillet with salsa and bake for 20-25 minutes at 350 degrees. Sometimes I squirt a little lemon juice on top but is not necessary. Give it a try and let me know how you like it !!!
Another great chart on the variety of milk. I usually stick to unsweetened Almond Milk for all my dairy needs but I do drink low fat chocolate milk after intense cardio sessions. Enjoy your weekend!!!
Here’s another quick and delicious side dish for those that like mushrooms.
I used crimini mushrooms. Washed and sliced. Vidalia onion sliced and some minced garlic. Just place onion on skillet with a tablespoon of grass fed butter and balsamic vinegar and brown. After a few minutes, add in the mushrooms. Season with pepper, thyme and rosemary. Feel free to add any other spice you prefer. Cook until mushrooms are tender. Enjoy!

I’m celebrating this fourth of July with some chocolates, home made that is!!! I’m not a huge fan of chocolate but I do have a sweet tooth and I was very excited when I found this recipe. Nothing like a delicious chocolate after a nice meal and that’s exactly what I’m planing on for today.

Here’s another great side dish combination: baby Bok Choy, baby onions, and snap peas. It was as simple as sprinkling some pepper and olive oil, mixing it all on a baking sheet. Bake at 350 for 20-25 minutes turning veggies once.
